baby artichoke salad
a lovely, easily tossed together, late summer salad:
the tops of garden-fresh celery, sliced paper-thin on the bias, fragrant leaves included
small fresh artichokes, stemmed and sliced paper-thin
sweet onion of choice, sliced paper-thin
chopped flat-leaf parsley
dash of red pepper flakes
drizzle into the salad & toss: salt, lemon rind & juice, olive oil & pepper. add slivers of parmigiano reggiano cheese. a-maze-ing.
