bacon wrapped shrimps, yucatan style
fresh shrimps, deveined and butterflied
good slab bacon
manchego cheese, grated fine
little bit of sour creme or mexican crema
roasted garlic cloves, chopped finely
mix the manchego cheese with the creme, chopped cilantro, garlic, and season well to taste. set aside while you butterfly the shrumps.
smear in the cheese/cilantro/roasted garlic mix into the laid out shrumps
close shrumps and wrap tightly in the bacon
grill on all sides under med heat, turn frequently til done, don’t overcook.
serve with a typical yucatan preparation of stewed tomatoes, yellow chiles, sweet pepper, lime and fresh herbs, over coconut-seasoned rice.
